Health Boosting Carrot Cake: A Guilt Free Delight (Gluten-Free and Dairy-Free)

Health Boosting Carrot Cake


Ingredients:


  • 2 cups grated carrots (for vision support)
  • 1 cup gluten-free all-purpose flour
  • 1/2 cup almond flour (for heart health promotion)
  • 1/4 cup ground flaxseed (for immune system boosting properties)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 3/4 cup maple syrup or honey (for antioxidants)
  • 1/2 cup unsweetened applesauce
  • 1/3 cup melted coconut oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts (for heart health promotion)


Instructions:


  1. Preheat your oven to 175°C. Grease and flour a 9-inch round cake pan or line it with parchment paper.
  2. In a large mixing bowl, combine the gluten free all purpose flour, almond flour, ground flaxseed, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt. Mix well to combine.
  3. In another bowl, whisk together the maple syrup or honey, unsweetened applesauce, melted coconut oil, eggs, and vanilla extract until smooth.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix.
  5. Fold in the grated carrots and chopped walnuts until evenly distributed throughout the batter.
  6. Pour the batter into the prepared cake pan and spread it out evenly with a spatula.
  7. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  8. Remove the cake from the oven and allow it to cool completely in the pan before removing it from the pan and transferring it to a wire rack to cool completely.
  9. Once the cake has cooled, you can frost it with dairy free cream cheese frosting if desired, or simply dust it with powdered sugar for a lighter option.
