Inspired by my beautiful home from home, Tulum.
Before being diagnosed with Coeliac disease, back when I was 17 – burritos were my absolute FAVOURITE thing to eat.
A restaurant near my college sold them and it was the highlight of my week, grabbing lunch here.
Since then, I never really entertained burritos until I travelled to Tulum. I never really entertained gluten free wraps to be honest, because as soon as you attempt to wrap your filling, the entire thing would completely fall apart. They rip incredibly easily resulting in everything falling out, everywhere. I didn’t find this enjoyable!
UK supermarkets sell the standard gluten free wraps, some are ok, some are not, some are totally bland. I haven’t come across any UK supermarket that sells coconut wraps!?…. and that was my BIGGEST game changer.
Visiting Tulum was incredible. My special place…. plus – gluten free meal choices, everywhere!
We found a little restaurant in Downtown which became our ‘go to’. It was a cute little burrito place which also offered bowls and smoothies and they even brewed the most amazing coffee (they make their own milk; almond, oat etc). So naturally, we would go back most days! They sold standard burritos and then they offered gluten free alternatives as well. Same filling (gluten free), but beautifully wrapped up in a gluten free coconut tortilla.
Well…. I’ve recreated this beauty and I’m tell you now, it’s absolutely delicious!! Springy, coconutty, fulfilling…. YUM! They don’t rip when your roll up your filling and the taste us just sensational!
So, I’ve decided to make them for you and offer burritos on our breakfast, lunch and dinner menu! (I’ll vacuum pack them for you so they don’t dry up).
