- Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper.
- Pierce the sweet potatoes several times with a fork and place them on the prepared baking sheet. Bake in the preheated oven for 45-60 minutes, or until the sweet potatoes are tender and easily pierced with a fork. Allow them to cool slightly.
- Once cooled, scoop the flesh out of the sweet potatoes and place it in a large mixing bowl. Discard the skins.
- Add almond flour, grated Parmesan cheese (if using), egg, dried oregano, garlic powder, salt, and pepper to the bowl with the sweet potato flesh. Mix until well combined and a dough like consistency forms.
- Transfer the sweet potato dough onto the lined baking sheet. Using your hands, press the dough into a round pizza crust shape, about 1/4 inch thick.
- Bake the sweet potato pizza crust in the preheated oven for 25-30 minutes, or until the edges are golden brown and the crust is cooked through.
- Once the crust is done, remove it from the oven and add your favourite pizza toppings. Return the pizza to the oven and bake for an additional 10-15 minutes, or until the toppings are heated through and the cheese is melted and bubbly.
- Slice the sweet potato pizza and serve hot. Enjoy your delicious and nutritious homemade pizza!
