Smashed Sweet Potato Pizza

Smashed Sweet Potato Pizza
  1. Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper.
  2. Pierce the sweet potatoes several times with a fork and place them on the prepared baking sheet. Bake in the preheated oven for 45-60 minutes, or until the sweet potatoes are tender and easily pierced with a fork. Allow them to cool slightly.
  3. Once cooled, scoop the flesh out of the sweet potatoes and place it in a large mixing bowl. Discard the skins.
  4. Add almond flour, grated Parmesan cheese (if using), egg, dried oregano, garlic powder, salt, and pepper to the bowl with the sweet potato flesh. Mix until well combined and a dough like consistency forms.
  5. Transfer the sweet potato dough onto the lined baking sheet. Using your hands, press the dough into a round pizza crust shape, about 1/4 inch thick.
  6. Bake the sweet potato pizza crust in the preheated oven for 25-30 minutes, or until the edges are golden brown and the crust is cooked through.
  7. Once the crust is done, remove it from the oven and add your favourite pizza toppings. Return the pizza to the oven and bake for an additional 10-15 minutes, or until the toppings are heated through and the cheese is melted and bubbly.
  8. Slice the sweet potato pizza and serve hot. Enjoy your delicious and nutritious homemade pizza!
